Mediterranean Chicken Skewers

Chunks of Whole30 Italian Herb Chicken on skewers with yellow bell pepper, red onion, zucchini, yellow squash, and grape tomatoes. Drizzled with a dairy-free herb tahini sauce.

Ingredients:

  • 3 Whole30 Italian-Style Chicken Breasts

  • 1 Zucchini (cut into 2” cubes)

  • 1 Yellow Squash (cut into 2” cubes)

  • 1/3 Red Onion (cut into 2” cubes)

  • 10 Cherry Tomatoes

  • 1 Bell Pepper (cut into 2” cubes)

  • 2 Tbsp. Olive Oil

  • 1 tsp. Kosher Salt

  • Ground Black Pepper (to taste)

Tahini Sauce:

  • 3/4 C Tahini

  • 1/3 C Lime Juice

  • 2 Cloves Garlic (minced)

  • 1/4 C Water

  • 1/2 tsp. Kosher Salt

  • 1/2 C Parsley (chopped)

Prepare the Sauce

  1. In a food processor combine tahini, lime juice, garlic, water and 1/2t of salt. Blend until the mixture is homogenous.

  2. Then the chopped parsley can be added. Blend just enough to mix the parsley throughout.

  3. This sauce will get very firm if chilled so it is easier to use if made right before it is needed or left out room temperature for a bit.

Prepare the Skewers

  1. Cut all of the vegetables into large 2” chunks.

  2. In a mixing bowl combine all of the vegetables and marinate with the olive oil, 2t salt. Add pepper to taste.

  3. If you have skewers you can arrange the vegetables how ever you like, bamboo wooden skewers work well too.

  4. Grill the vegetables on all sides possible, this will take about 15 minutes on a hot gas grill.

  5. If you do not have skewers it takes just a bit more effort to grill the vegetables without them.

Assemble

  1. The chicken can be cut into large chunks and reheated in the microwave.

  2. The vegetables can be removed from the skewers and divided onto the three plates.

  3. The warm chicken can be placed on top of the vegetables.

  4. Drizzle the tahini sauce over top or use on the side as a dipping sauce.

  5. Serve and enjoy!
