Chicken Piccata

Ingredients:
3 Whole30 Lemon Garlic Chicken breasts
1 Head of Broccoli
1 1/2 Tbsp. Ghee
1/2 Small White Onion (minced)
1 Clove Garlic (minced)
2 C Chicken Broth
Lemon Juice (half lemon)
1 Tbsp. Capers
1/4 tsp. Kosher Salt
Piccata Sauce
In a sauce pot add the ghee and minced onion, cook on low heat until the onions turn translucent. About 5 minutes.
Next add the garlic and cook for 1 minute, do not brown the onion or garlic.
Then the chicken broth can be added and the heat can be brought up to high.
Keep the sauce at a simmer and let cook for a couple of minutes until the onions are very soft. About 5 minutes.
Lastly the salt, capers and lemon juice can be added. Bring the sauce to a boil and then it is ready to serve.
Assemble
Take the head of broccoli and cut it into small florets. Then the broccoli florets can be steamed in the microwave or boiled on the stove.
The chicken breast can be reheated in the microwave (see directions on package) and then sliced.
Place the broccoli florets and sliced chicken breast on a serving plate and then the piccata sauce can be poured over top.
Garnish with fresh lemon if desired.
