Chicken Dijonnaise Salad

Sliced Whole30 Italian herb chicken, served on a bed of green beans tossed in a dairy-free dressing.

Ingredients:

  • 3 Whole30 Italian-Style Chicken breasts

  • 2 C Green Beans

  • 3/4 C Whole30 compatible Mayonnaise

  • 3/4 C Whole30 compatible Dijon Mustard

  • 2 tsp. Apple Cider Vinegar

Prepare the Dijonnaise

  1. Combine the mayonnaise, mustard and vinegar and mixed until homogeneous.

Assemble

  1. Boil the green beans.

  2. Slice the chicken into strips.

  3. Reheat the chicken in the microwave to get the chill off, about 90 seconds.

  4. In a mixing bowl, combine the beans and dijonnaise. Mix until the dressing is evenly distributed.

  5. Divide the green bean mixture onto three plates, then top with the sliced chicken and enjoy!
